Greenhouse Tomato and Pasta Toss
The best dishes are often the simplest. In the time it takes to cook the pasta, the sauce is ready.

Serves 4
8 oz (250 g) uncooked capellini, vermicelli
or spaghettini
1/2 cup (125 ml) butter
1 cup (250 ml) sliced fresh Ontario Mushrooms
1 Ontario Onion chopped
1 clove garlic, minced
2 Ontario Greenhouse Tomatoes, seeded and diced
1/4 cup (50 ml) chopped fresh parsley
Salt and pepper
Grated Parmesan cheese
In saucepan, cook pasta according to package directions. Meanwhile, in a large skillet, melt butter; sauté mushrooms, onion and garlic until tender. Drain pasta; return to saucepan. Add vegetable mixture, tomatoes and parsley; toss to combine. Season to taste with salt, pepper and Parmesan cheese.

Apple Pie French Toast
Crisp on top and moist in the middle, this French toast studded with tender sweet apples will be a big hit with everyone. Drizzle it all over with warm Ontario maple syrup and enjoy for breakfast or brunch.

Makes 8 servings
10 cups (2.5 L)cubed (1-inch/2.5 cm) egg bread
3 cups (750 ml)diced Ontario Apples (about 3 medium apples)
2 tbsp. (25 ml)packed brown sugar
1-1/2 tsp. (7 ml)ground cinnamon
6 Ontario Eggs
3 cups (750 ml)milk
1/3 cup (75 ml)Ontario Maple Syrup
1 tbsp. (15 ml) vanilla
Ontario Maple Syrup, optional
Spray 13-x 9-inch (33 cm x 23 cm) glass baking dish with vegetable spray; spread half of the bread in dish.
In medium bowl, toss together apples, sugar and cinnamon; scatter half over bread. Top with remaining bread and apples. In same bowl, whisk together eggs, milk, maple syrup and vanilla; pour over bread mixture. Press down gently with spatula to coat in liquid. Let stand for 30 minutes. (Make-ahead: Cover and refrigerate overnight. Let stand at room temperature while preheating oven.)
Bake in 350°F (180°C) oven for 50 to 55 minutes or until golden brown and egg mixture is set. Drizzle with warm maple syrup, if you like.
Tips: For extra fibre, flavour and time-saving, leave the skin on the apples. Skip cutting the bread into cubes and let the kids tear the bread into pieces. Delicious with slices of Ontario Peameal Bacon.
